Our small-scale production allows us to devote exceptional care to every detail โ from vineyard sourcing and grower partnerships to winemaking and cellar aging. Employing precise, modern techniques, Keith ensures each bottle captures the fullest, most authentic expression of the land from which it comes.

Hibou /ee-boo/, French for โowl,โ reflects our pursuit of crafting great wines from exceptional grapes โ patient, observant, and deliberate in our approach. Like the owlโs call echoing through the vineyards, we aim to capture a sense of awe in every wine โ exploring, taking risks, and allowing the process to unfold to express the beauty of place.
From Vineyard to Barrel
Hibou grapes are grown organically in the heart of Sonoma Valley, with each variety planted in soils that best reveal its character โ Sauvignon Blanc, Sauvignon Musque, and Semillon flourish on heavier, clay-rich earth, while the red varietals thrive on rocky, cobbly, well-drained soils. Our Moon Mountain Cabernet comes from a single vineyard perched between 1,500 and 1,800 feet, where volcanic, rugged soils produce wines of remarkable power and concentration. The reds age gracefully in thin-stave, tight-grain French oak barrels, while the whites spend time in both stainless steel and French oak, gaining texture and mouthfeel. The whites are sterile-filtered, and the reds are bottled unfined and unfiltered.
